I live in an apartment complex and have an assigned parking spot and we were given stickers to place in our windows. My question is if it is legal for them to tow my car from its assigned parking spot that I pay for without warning if the sticker is not displayed?

Of course. If the arrangement is you get a sticker to show you have paid for a space, and you don't display the sticker, how are they to know you paid. It's not up to them in that situation to track down whether the car with no sticker belongs to someone who paid.
