I was charged with Grand larceny along with two other friends. We shop lifted merchandise from a store. They added the value of all the items we each had and charged each of us with the total amount of 2,500. My question is can they add the values of all the items because techically we each stole less than 1000$

If you were acting on concert (working together) the DA can add the values together to charge you with the felony rather than the misdemeanor. I suggest that you hire a good criminal defense lawyer. Depending on the facts, you may want your lawyer to subpoena the surveillance video. Then again, you might not want to do that.... depending on what it will show.
